Vegetarian bell peppers with cheese, garlic and spinach. This snack or meal in itself is low calorie and budget friendly. Easy to make and full of nutrients.
Preparation time 10 minutes.
- Spinach chopped and blanched
- 1 teaspoon crushed Garlic
- 1 teaspoon Olive Oil
- Red and Yellow Peppers
- Ricotta cheese or Paneer. You can even use Feta Cheese. For vegan alternative use Tofu.
- Chilli powder and Salt to taste
Heat oil and add crushed garlic. Stir for few seconds.
Add chopped and blanched Spinach.
Turn off heat and add chilli and salt to taste.
Add Ricotta cheese or Panner and mix it all together.
Sprinkle olive oil on a skillet and roast the peppers.
Place the mix on to the peppers and serve. You could even eat it with toast.
