Lemon Millet salad : Superfood Of The Day

Vegan Millet Salad Recipe

Move over Quinoa. Millet is in town. 

Millet is a staple grain in India, East Asia and parts of Africa. High in protein,  gluten-free and excellent source of B-Complex vitamins.lemony millet salad ready to eat


  1. 3/4 cup millet.
  2. 1 Large Cucumber
  3. 1 Cup Sweet Corn
  4. 1 Spring Onion
  5. 1-2 Tomato
  6. Basil leaves
  7. Salt and Pepper to taste
  8. 3 Tablespoon Lemon Juice


Boil millet in a pan of water for about 25 minutes. Drain and let the millet cool.

Add Sweet Corncorn in millet salad

Add Cucumber add cucumber to millet salad

Add chopped Spring Onion and diced Tomatoes tomato and spring onion to millet salad

Lemon Juice, Salt and Pepper to tasteIMG_6565

Add chopped Basiladd basil to millet salad

Prepare in advance or eat immediately.
