Vegan Millet Salad Recipe
Move over Quinoa. Millet is in town.
Millet is a staple grain in India, East Asia and parts of Africa. High in protein, gluten-free and excellent source of B-Complex vitamins.
- 3/4 cup millet.
- 1 Large Cucumber
- 1 Cup Sweet Corn
- 1 Spring Onion
- 1-2 Tomato
- Basil leaves
- Salt and Pepper to taste
- 3 Tablespoon Lemon Juice
Boil millet in a pan of water for about 25 minutes. Drain and let the millet cool.
Add Sweet Corn
Add chopped Spring Onion and diced Tomatoes
Lemon Juice, Salt and Pepper to taste
Add chopped Basil
Mix well and serve.
Prepare in advance or eat immediately.
